The Inside Scoop on Jasmine’s Night Market Favorites Jasmine spills the “inside
scoop” on why night markets are her favorite thing to do in Taiwan. She says
that eating in Taiwan is top of the list because the food is “seriously just
unmatched.” From boba milk tea to oyster pancakes to stinky tofu, your mouth is

HAILEY AND ADAM’S FIRST TIME SCUBA DIVING IN TAIWAN

Scuba Adventures with Hailey and Adam Dive into Taiwan with Hailey and Adam as
they take us underwater on a scuba adventure. Adam finds himself impressed by

LEARN CHINESE WITH HAILEY AND ADAM

Hailey and Adam’s Language Recap Learn basic Chinese with Hailey and Adam
through their language crash course. The couple is American-born, yet fluent in
Chinese, so they often get asked how they were able to learn the language.
Hailey and Adam mention that they lived in Taiwan for 1-2 years, and they found
that the most quick and effective way to learn Chinese was by “talking to the
natives,” says Adam. So, be sure to befriend the locals on your escape to
Taiwan. In the words of Adam, “Taiwanese people will love you” just for the fact
that you’re in Taiwan, but don’t underestimate how much you may learn from them!

HOW TO MAKE SCALLION PANCAKES WITH INGA

Inga’s Scallion Pancake Dish Taiwan has so many amazing flavors and one of
Inga’s favorite things to make is scallion pancakes. This 4-ingredient crispy
and flaky dish is very popular in Taiwan, and it’s fairly “straightforward to
make,” according to Inga. She says that the “flavor really brings [her] back to
Taiwan.” The Step-By-Step Tutorial To make this favorited dish at home, you’ll
need to follow a quick, step-by-step process brought to you by our food expert,
Inga. First, you’ll need to press down on the dough, and then roll it out with a
food roller. Once it is rolled out, sprinkle on the scallions and gently peel up
the corners. Again, you’ll want to try to roll it out as much as you can,
thinning out the dough into a flat pancake shape. Lastly, throw the scallion
dough into a pan and fry it up. Ta-da, you have now made your very own

HAILEY AND ADAM RELEASE SKY LANTERNS IN TAIWAN

Hailey and Adam’s Fairytale Moment in Shifen Join Hailey and Adam as they
decorate lanterns with New Year’s wishes and release them into the sky.
According to Jasmine, sky lanterns are the main attraction of the small town,
Shifen. The streets on each side of the tracks are lined with stores where you
can pick out your lantern to “decorate and write your dreams on,” she adds. The
vendors are very friendly people who are more than willing to help you take
numerous photos to capture your memorable lantern experience. Hailey and Adam
had the opportunity to walk these streets, meet the friendly vendors, and select
their very own lantern to write characters, blessings, and hopes for the
upcoming year. Upon completion, they joyfully lit their lantern and carefully
released it into the sky, exclaiming, “this is so much fun!” Legend Behind Sky
Lanterns Decorating and releasing sky lanterns is a traditional experience you
must take part in at least once in your lifetime. The legend states that during
the Three Kingdoms period, Chinese statesman Zhuge Liang, known as Kongming,
used lanterns to send military signals. The shape of the lanterns resembled his
hat, so they were called “Kongming lanterns.” Towards the 19th century, the
purpose of lanterns shifted. They were used by villagers to signal to their
families, letting them know they were safe. Now, sky lanterns have evolved into
a way to send off wishes, just as Hailey and Adam had the pleasure of doing.
Trust us, you’ll want to experience this magical sky lantern moment in person,
so you can watch your own hopes and dreams light up the sky.

LIGHT UP THE NIGHT WITH HAILEY AND ADAM AT TAIWAN’S MID-AUTUMN FESTIVAL

Chiayi Light Festival Hailey and Adam celebrate the Mid-Autumn Festival, also
known as “Moon Festival” and “Mooncake Festival,” by traveling to Chiayi to
experience the city’s immersive light show. The Mid-Autumn festival is
celebrated in Taiwan and other parts of East Asia, marking the fall harvest and
offering traditional worship to the moon for some people. Follow them through
the “Weaving with Light, Dancing with Shadow” light show, displaying a variety
of beautifully colored lights and crowds of people who came to join in on the
festive celebration. Hailey mentions that there are so many people walking
around during the coronavirus because “Taiwan is so safe.” She continues by
talking about how surreal it is to “be out in public and not have to worry about
it.” The Chiayi light show in Taiwan guarantees a safe, magical experience that
is the perfect kickoff to the Mid-Autumn festival. Celebration Details The
Chiayi light show is the biggest outdoor light exhibition in Taiwan. It is said
that the sights, music, and smell of nature provide an all-encompassing
experience. The Moon Festival, itself, lasts several days but the Chiayi light
show runs for a month, enabling more time to celebrate. No need to worry about
large gatherings and celebrations when you’re in Taiwan.
