INGREDIENTS

Units: US
 * 4 medium sweet potatoes
 * 1 tablespoon canola oil
 * 1⁄2 teaspoon coarse black pepper
 * 1⁄4 teaspoon kosher salt
 * 1⁄2 teaspoon paprika
 * 1⁄4 teaspoon cayenne pepper
 * 2 -3 cloves garlic, minced

DIRECTIONS

 * Cut the potatoes into thin wedges.
 * Pile them in a bowl and cover them with cold water.
 * Let rest 15 minutes.
 * Preheat oven to 375 degrees F.
 * Coat a baking sheet with vegetable spray.
 * Set aside.
 * Drain the potatoes and dry them with paper towels.
 * Press the potatoes with paper towels to remove all water.
 * Transfer the potatoes to a large bowl.
 * Sprinkle the potatoes with oil, tossing the potatoes to disburse it.
 * Then sprinkle with pepper, salt, paprika and cayenne pepper.
 * Bake the potatoes at 375 degrees F for 20 minutes.
 * Turn over the potatoes.
 * Sprinkle potatoes with garlic and continue cooking for another 15-20 minutes
   or until crisp and brown.
 * Serve immediately.

 1. Mirjam you are truely Zaar's sweet potato Maven ! The roasting intensifies
    the sweet potato flavor so that it is the perfect foil for the black and
    cayenne pepper. The garlic adds another layer of flavor and a bit of crunch.
    Next time I think I'll add a bit of rosemary and serve it with lamb, then
    maybe thyme, for a roast beef _ how about some sage with pork and then

 2. 5 star all the way - We loved this recipe. Nice & peppy served with a juicy
    burger. Thanks Mirj for a lovely addition to our Saturday night dinner 3

 3. Very tasty!! Loved the flavour & tenderness. I will be more attentive to
    making the fries the same size next time - I had a little trouble with some
    burning before others were cooked thoroughly.

 4. These are so delicious! We make them at least once a week. When I make them
    into wedges them seem to burn, so I cut mine into about 1 inch wide and 1/2
    inch thick fries. And they usually don't take quite as long to cook this
    way...maybe half the time. I especially love the chunks of garlic at the
    end....Amazing...Will be making these FOREVER! :)

 5. The most perfect oven sweet potato fries! They had the best seasoning and
    great fluffy texture on the inside. Make a big batch and keep them in the
    fridge for a snack or a great addition to your weekly lunches.

 1. Another great sweet potato recipe! I didn't feel like mincing garlic, so
    just used garlic powder. I also used a little bit of montreal steak
    seasoning instead of plain black pepper to add a little bit more kick.

 2. Yummy, slightly crispy. I used chili powder in place of the cayenne pepper,
    my choice. Used olive oil in place of canola oil. I think that soaking the
    sweet potatoes does make for a crisper potato. Thanks, Will be making again.

 3. Mirj....these were great. I didn't use the oil, but sprayed them with my
    Pampered Chef oil spritzer....saved a few calories. Also sprinkled with
    garlic powder instead of the minced garlic. Hubby and I thoroughly enjoyed
    them...thanks
