I wanted to come up with something that really packed a fresh, nutrient-dense
punch without sacrificing flavor or texture.

Let’s just say this recipe gets eaten VERY quickly every time (and then dessert
tastes SO much better)!

INGREDIENTS

  

 * 15 oz roasted red pepper hummus
 * 12 oz Tzatziki sauce
 * 1 c packed spinach, chopped
 * 1 medium cucumber, diced
 * 1/4 c scallions, diced
 * 1 c cherry tomatoes, diced
 * 4 oz feta cheese
 * sliced cucumbers for dipping
 * pita chips for dipping
 * carrot chips for dipping


INSTRUCTIONS

 

 * Spread the hummus on the bottom of a pie dish.
 * Spread the Tzatziki sauce over the hummus.
 * Layer the chopped spinach over the hummus.
 * Add the scallions to the spinach.
 * Layer the cucumber over the spinach/scallions.
 * Add the tomatoes.
 * Top with the feta cheese.
 * Serve immediately or refridgerate until ready to serve. Serve with pita
   chips, sliced cucumbers, and carrot chips!
