TASTE THE BEST OYSTERS IN TASMANIA



Tasmania is renowned for producing some of the finest oysters in the world,
particularly the Pacific oyster (Crassostrea gigas) and the native Angasi oyster
(Ostrea angasi).

A tour experience with Tasmanian Wild Seafood Adventures gives you the
opportunity to taste some of the best oysters in Tasmania. We've come up with a
list of what you should always do when looking for a great oyster experience...
and how we help you achieve it.

 * Find a reputable oyster farm, restaurant, or tour operator - this one's easy
   because we take you out on our own vessel, operated by Shane and Nick.
   They've been fishing for years, and truly, saltwater runs in their veins.
   You'll be taken down the Channel to Bruny Island, home of some of the best
   oyster farms in Tasmania. They'll be happy to tell you all about oyster
   cultivation, harvesting, and preparation for eating. You'll even have the
   chance to shuck your own oysters. They don't get any fresher than that!
 * Raw (au naturale) vs. Cooked - oysters can be enjoyed either raw or cooked.
   On our tours, you have the chance to try either or both but the choice
   depends on your personal preference.
    * Eating oysters raw (also know as au naturale) allows you to experience the
      pure taste of the sea. They'll be served on the half-shell with a squeeze
      of lemon, a dash of hot sauce, or a simple mignonette sauce (a
      vinegar-based sauce with minced shallots and cracked black pepper)
    * If you prefer cooked oysters, popular preparations include grilled oysters
      with butter and herbs, oysters Kilpatrick (with bacon and Worcestershire
      sauce), or oyster pies. We'll usually serve them Kilpatrick. Once they're
      cooked, they'll take on a slightly different texture an flavour, but
      either way, oysters from Tasmania always taste like nothing else you've
      experience.

 * The best oysters are freshly shucked, still in their shells, and have a
   clean, briny aroma. The shells should be tightly closed or only slightly open
   and should feel heavy for their size.
 * We'll enhance your oyster tasting experience by pairing them with a dry
   white, sparkling wine, or a light beer. These beverages complement the briny
   and delicate flavors of the oysters.


OYSTER TASTING TIPS

 * Sight: Look for plump, moist oysters with a clean shell and clear liquid.
 * Smell: They should have a fresh, briny scent of the ocean.
 * Texture: Raw oysters should be firm and slightly chewy, not mushy or slimy.
 * Taste: The flavor should be briny, with sweet and mineral notes.

Each oyster can have unique flavour characteristics based on its origin and
growing conditions.
