This delicious 400-calorie salad is a helpful tool for weight loss because it
provides a good balance of fiber, protein and healthy fats from loads of veggies
and beans, all tossed in a tangy apple-cider vinaigrette. To meal-prep these for
lunch throughout the week, pack the dressing and the salad separately and make

Really liked this recipe, will be a favorite that we will make often. The only
change I made was to add a teaspoon of honey to the dressing. Letting it
marinate for a few minutes lets the flavors combine. It was delicious!!! Thank

Very nice take on a healthy salad! I would recommend altering the recipe for a
double portion. This only fed my husband and I for 3 meals. I also think the
chickpeas could probably be softened a bit with maybe just boiling them for 5-10
min if you have extra time. It would go a long way with the soft avocado! Also
recommend buying artichokes in water in stead of brine.

I've made this salad easily a dozen times. It's a great hearty lunch. I usually
add a soft cheese like goat or feta. The dressing is excellent. It's super
filling and flavorful.
