A caldero like this Imusa version is extremely similar to a Dutch oven. It’s
often used in South American cooking, but can be used in almost all the same
ways, in particular to cook stews and rice and beans, and braise meat. While the
typical Dutch oven is made from enamel cast iron, this one is actually made from
aluminum and has a 7.5-quart capacity—large enough to fit a whole roast chicken
and prepare one-pot meals for as many as eight people. 



There are several benefits to using aluminum to cook dishes that need slow
simmering, like stews and braises. Aluminum is well-known for heating quickly,
and cooking ingredients evenly thanks to the fact that it holds onto all that
heat without producing hot spots. Another benefit to aluminum is that it becomes
increasingly seasoned (and nonstick) after each use, so it actually gets more
durable the more you use it. 



This pot also comes with a lid, which is handy if you are cooking rice or
meat—it fits tightly on top so that moisture circulates within the pot,
preventing your meal from drying out as it cooks. The rounded sides make it
especially easy to continually stir sauce and stews.
