Barbecue purists, look away: Our favorite way to make pulled pork is in a slow
cooker. It may not be authentic, but it’s super easy and totally foolproof—the
meat comes out fall-apart tender every time. Break out some soft hamburger buns,
a few pickles and a quick homemade slaw and dinner is served!

INGREDIENTS

3 tablespoons packed brown sugar (light or dark)





2 teaspoons hot paprika

1 teaspoon mustard powder

1/2 teaspoon ground cumin

Kosher salt and freshly ground pepper

1 3-to-4-pound boneless pork shoulder, trimmed of excess fat

2 teaspoons vegetable oil

1/2 cup apple cider vinegar, plus more to taste

3 tablespoons tomato paste

6 to 8 potato buns

Barbecue sauce and prepared coleslaw, for serving

DIRECTIONS

 1. Combine 1 tablespoon brown sugar, the paprika, mustard powder, cumin, 2
    teaspoons salt and 1/2 teaspoon pepper in a small bowl. Rub the spice
    mixture all over the pork.
 2. Heat the vegetable oil in a large skillet over medium heat. Add the pork and
    cook, turning, until browned on all sides, about 5 minutes. Remove the pork
    and transfer to a plate; whisk 3/4 cup water into the drippings in the
    skillet. Transfer the liquid to a 5- to 6-quart slow cooker.
 3. Add the vinegar, tomato paste, the remaining 2 tablespoons brown sugar and 2
    cups water to the slow cooker and whisk to combine. Add the pork, cover and
    cook on low, 8 hours.
 4. Remove the pork and transfer to a cutting board. Strain the liquid into a
    saucepan, bring to a boil and cook until reduced by half, about 10 minutes;
    season with salt. Roughly chop or shred the pork. Transfer to a bowl and
    toss with 1 cup of the reduced cooking liquid and salt and vinegar to taste.
    Serve on the buns with barbecue sauce, coleslaw and pickles.

Fantastic recipe. Adjust the apple cider vinegar and brown sugar to your
preference. At the end slowly add the reduced pot juice to taste.

Have made it 4 times. One of our family favs for sure! Makes a lot so I save
half of the cooked pork before adding the sauce. Great for last min. pork tacos
ect.
Also I've added BBQ sauce to the reduced liquid for that added extra zing.
Caerfull not too much can become overpowering.

I made the recipe exactly as written and I was seriously underwhelmed. The meat
did not take on any flavor even after cooking for 8+ hours. While the sandwich
is good, it's because of the added flavors from the coleslaw and pickles. The
bun was way too soft to really hold the meat - something more substantial would
have been better. A lot of work for ho-hum flavor.

This is delicious and so easy. Mixed the rub ingredients last night and
slathered over pork. This morning I unwrapped it, and the rub was a sticky
thickened glue. Then cut the onions and threw all into a crock pot. I cooked it
on low for 8 hours. I used Brioche buns. I shredded The pork and piled on the
buns. I added some coleslaw and dill pickles. Yummo! Thanks Ree!

Good point!
I myself have made it a few good times. I added a little of our fav BBQ sauce
after reducing the liquid. Always a hit!

Followed the recipe except used smoked paprika, and added about 2 tablespoons of
honey to the sauce while reducing.

Yes, low and slow. 325 degrees F. For 4 - 6 hrs. depending on lbs.

Made this today and it is absolutely delicious! Just made a couple of changes.
Used a bottle of beer plus 1/2 c water to equal 2 cups. And added a sliced onion
on the bottom of the slow cooker. Cooked on high for 6 hours. Added home made
cole slaw and served on potato slider rolls. So easy and a hit with the whole
family!
