Aside from goya chanpuru and taco rice, I don’t remember off hand other recipes
from Okinawa which you have made. Just curious if there will be more YouTube
videos in the future in regards to that prefecture. Continue to keep up the good

Hello, Chef-sama. Can you please share a recipe to make Miso-katsu? I have not
had a chance to visit Nagoya but I’ve always wondered what it’d taste like. Does
the miso help balance out the sourness of the katsu sauce? Thank you for your

Miso katsu is delicious! It tastes authentic when made with bean miso such as
Hatcho miso or Akadashi miso. Chef hasn’t made miso katsu because she thought it
would be difficult to find Hatcho miso overseas, but there seem to be areas
where it is available. We would love to make it and share the recipe. Thank you
for your request!

Thank you for replying So happy to hear from you. I understand that chef was
being considerate given that she has a worldwide audience.

In Vietnam, we a decent selection of Japanese ingredients since Aeon opened
their stores here. I hope she’ll decide to share her recipe at some point, or
perhaps we could use regular red/white miso as an alternative.

P.S I am a fan of Keigo Higashino and the way he described the cuisine in his
latest book makes me want to visit Aichi for sure

We haven’t had the opportunity to try Ainu cuisine, so we don’t know much about
it. Unfortunately, we haven’t had a chance to make it either, and we don’t have
any plans to do so at the moment. Sorry about that.?‍ However, we have made
Ishikari Nabe and Ikameshi, which are Hokkaido dishes, so please check out the
recipes if you’re interested.???

I was wondering will you restock the kitchen scales? I have a friend that breeds
poodles and would love to use it to weigh newborn puppies!
