ABOUT US

Heatherbrae Farms is a first-generation farm located in the Waterloo Region in
south-western Ontario, Canada. The Marshall family owns and operates 220+ acres
with diversified, regenerative agricultural practices. The farms are located on
a hill in the village of Bamberg with rolling hills, sugar bushes, and natural
springs bubbling up in the pond and nearby creeks.

The farm produces 100% grass-fed/grass-finished beef, non-gmo heritage pork,
naturally grown garlic, maple syrup, and high quality hay. Heatherbrae Farms
prioritizes farming in harmony with nature by protecting soil health, promoting
animal wellbeing, and avoiding the use of chemical intervention.


OUR PRODUCTS


GRASS-FED/GRASS-FINISHED BEEF

Our beef is locally raised and grain free. We rotationally graze our cattle on
lush pastures throughout the summer. We use low-stress animal handling
techniques to move cattle to fresh grass every couple days over the summer. Over
the winter they are fed bales of hay which is usually made up of dried
grasses/alfalfa.

NON-GMO HERITAGE BREED PORK

Our pork is raised from heritage breed pigs that are fed non-gmo local grains.
The pigs are raised with access to the outdoors/fresh air and their diet is
supplemented with Heatherbrae garlic, garden fresh vegetables and windfall
apples.

GARLIC

We grow hardneck garlic which is known for having strong flavours and large
cloves. Our garlic is grown without the use of pesticides or herbicides. Most
garlic imported to Canada is softneck which is known to have smaller,
irregularly shaped cloves. We grow three varieties of hardneck garlic.

 * Mt. Hood: A member of the Porcelain family of garlic. Each bulb has 4-7 large
   cloves and has a strong flavour when eaten raw, and a rich, sweet flavour
   when cooked.
 * Azores: A member of the Porcelain family of garlic. Each bulb has 4-6 large
   cloves and has a balanced flavour that is great for roasting. Initially found
   on the Azores (Portuguese Islands).
 * Duganski: A member of the marbled purple stripe family of garlic. Each bulb
   has 7+ small to medium sized cloves. Initially found at a market in
   Samarkand, Uzbekistan.

FREQUENTLY ASKED QUESTIONS


Is Heatherbrae Farms Organic?
Although Heatherbrae Farms is not certified Organic, we use natural practices
and avoid the use of pesticides and herbicides. We believe that by implementing
regenerative agriculture practices, we are producing nutrient dense foods for
our families to enjoy.
What is regenerative agriculture?
Regenerative agriculture is beyond the typical understanding of organic or
sustainable farms. Regenerative agriculture implements practices that seek to
build soil organic matter and restore ecosystems.

With many other regenerative farms around the world, we believe in the Five
Principles of Soil Health as described by Gabe Brown (Dirt to Soil, 2018).


 1. Limit Disturbance
    
    We believe that by limiting tillage and chemical spraying, we are allowing
    soil to better absorb water, create structure that limits erosion of organic
    matter and allows microbes to thrive.

 2. Armor the Soil Surface
    
    This means keeping the soil covered by leaving plant residue on the surface
    and growing cover crops over the winter.

 3. Build Diversity
    
    Biodiversity is nature’s default. We promote this by growing pastures with a
    mix of different grasses, forbs, and legumes. Diversity in plant types means
    they will have different growing patterns throughout the season and provide
    a variety of options for animals and insects.

 4. Keep Living Roots in the Soil
    
    Whether a perennial pasture, or a crop field, living roots should be present
    year round. This may mean planting a cover crop after harvest so that there
    is always a root in the soil.

 5. Integrate Animals
    
    Animals should be present in the agricultural system. Allowing animals to
    graze a plant will encourage the plant to grow and cycle carbon into the
    soil. Grazing animals help absorb C02 out of the environment down into the
    soil. Animals also produce manure which cycles nutrients back into soil
    reducing the need for additional fertilizer.

What is grass-fed/grass-finished beef?
This means the cattle are not fed any grain. The cattle graze pastures over the
summer where their diet consists of fresh grasses, forbs, and legumes. Over the
winter they are fed bales of hay which is usually made up of dried
grasses/alfalfa. Without being fed grain, the cattle take longer to be ready for
butchering. Finishing is referring to the period of time leading up to being
butchered.

Grass-fed/grass-finished cattle take longer to achieve intramuscular marbling in
the meat. Although it is typically leaner than grain-finished beef, we believe
the beef is rich in flavour.
