LUMINAL B BREAST CANCER: OLIVIA MUNN’S DIAGNOSIS EXPLAINED

Posted on 2024-03-14 by Wilbert Mack

Actress Olivia Munn announced on Instagram that she was diagnosed with breast
cancer in 2023.

Specifically, Munn was diagnosed with luminal B breast cancer, which is one of
the molecular subtypes of breast cancer, according to Dr. Rohit Rao, a breast
cancer expert at Mayo Clinic Comprehensive Cancer Center. Luminal B breast
cancer accounts for roughly 15% to 20% of all breast cancer diagnoses, Rao
noted.

“It tends to be more aggressive and tends to have a higher growth rate,” Rao
stated.

Additionally, this type of breast cancer is also more likely to present at a
later stage, he said, “So, either with the larger size of the tumor or the
cancer already having spread to the lymph nodes.”

Below, Rao explains the signs and who is at risk of this type of breast cancer,
as well as what you can do to stay on top of your breast health.

THE SIGNS OF LUMINAL B BREAST CANCER ARE THE SAME AS OTHER KINDS OF BREAST
CANCER.

“It’s important to highlight that the symptoms are essentially the same as any
other kind of breast cancer,” said Rao. “So, it’s not like this is an entirely
different kind, which has entirely different symptoms.”

But since it’s a faster-growing breast cancer, it’s important to pay attention
to any and all warning signs, he added.

Signs of breast cancer include nipple changes, a new breast mass, bleeding from
the nipple and a mass in the armpit, noted Rao.

Breast pain, changes to the size of the breast and dimpling of the breast skin
are also red flags, according to the Centers for Disease Control and Prevention.

WHO IS AT RISK OF LUMINAL B BREAST CANCER?

Luminal B breast cancer is more common in younger patients under 50, according
to Rao. (It’s worth noting that Munn was 42 when diagnosed.)

Additionally, people with a family history of breast cancer are at increased
risk. But even if you don’t have a history of breast cancer in your family,
there are other risk factors, too, noted Rao.

According to Rao, people with dense breasts have a higher risk, as are those who
have their first child after 30, people who don’t have children, people who go
through menopause at an older age (the definitions vary, but generally after 55)
and those who had their first period at a young age (generally under 12).

“All of these things may actually put them in the high-risk range, even without
a family history,” Rao said.

IT’S IMPORTANT TO KNOW YOUR BREAST CANCER RISK SCORE.

Munn shared on Instagram that she tested negative for all cancer genes,
including the BRCA mutation, which puts folks at higher risk of breast cancer,
ovarian cancer and pancreatic cancer, but her doctor recommended she completed a
breast cancer risk assessment, too.

A breast cancer risk assessment is a tool that physicians use to assess and
understand your lifetime risk of having breast cancer, according to Rao.

It measures the factors mentioned above — family history, pregnancy history,
gene mutations and more — to determine your breast cancer risk, resulting in a
lifetime risk score.

“So, based on the sum of all of these things, it gives us the lifetime risk for
the patient … typically anyone with lifetime risk which is more than 20% is
considered high risk,” Rao said. Munn’s lifetime risk was 37%.

“For patients with a score more than 20%, the doctors will typically recommend
supplemental MRIs in addition to mammograms,” Rao stated. Additionally, if
you’re under 40, the age at which you start screenings for breast cancer would
be lowered.

There are also risk-reducing medications that may be considered as well, he
said.

″[I] just encourage everyone to talk to their gynecologist [or] physician and
ask for a detailed breast cancer risk assessment through tools available,” Rao
said.

“Even if you don’t have a strong family history … I think everyone should
actually talk to their OBGYN about doing the detailed assessment,” he added.

It’s also important that you follow the recommended guidelines from your doctor
based on your risk assessment score and monitor for any of the breast cancer
warning signs mentioned above.

This can help doctors catch breast cancer early and treat it effectively. “We
should be able to cure a lot of patients if it’s caught early,” Rao said.

FOR GEN Z, FACEBOOK IS A MARKETPLACE

Posted on 2024-03-14 by Willie Miller

In December, Ellicia Chiu and Cher Su had just a few boxes in tow when they
moved into a walk-up apartment in New York’s Lower East Side neighborhood.
Before their move, from Los Angeles, the two friends knew that they would need
to furnish their new apartment with small kitchen appliances, décor and
furniture. But instead of purchasing new items, they knew it would be more
affordable to find secondhand items on Facebook Marketplace, the social
network’s buy-and-sell service.

“I only use Facebook for Marketplace,” said Ms. Chiu, 24, who added that she
spent most of her social time on TikTok and Instagram, which is owned by Meta,
Facebook’s parent company.

For many 20-somethings who don’t have a lot of disposable income, Marketplace is
a place to get deals on items they wouldn’t normally be able to afford.

“As someone who’s in their young 20s, I want to have nicer things but I don’t
have the financial means to get there yet,” said Ms. Chiu, who added that she
preferred Marketplace over other sites because its interface was easy to use,
making it easier to find deals on furniture.

Over the past decade, Facebook has declined in popularity with Gen Z as a social
site, a 2022 Pew Research Center survey found. Instead, younger people are
spending more of their social time on Instagram, TikTok and Snapchat.

“Facebook Marketplace is often referred to as ‘the internet’s garage sale’ and
is a modern-day counterpart to eBay and Craigslist,” said Yoo-Kyoung Seock, a
professor of textiles, merchandising and interiors at the University of Georgia,
who studies consumer behavior among Gen Z and millennials and environmental
sustainability in the textile industry. “The platform’s remarkable success is
largely due to the trust users place in it, which is a result of its unique
connection to Facebook’s social network.”

For a generation that is environmentally-conscious and prefers to shop
secondhand, Marketplace has become popular.

“Young people, including students and young professionals, are increasingly
drawn to used goods,” Dr. Seock said. Faster inflation has also made secondhand
purchases a practical choice, she added.

Launched in 2016, Marketplace has over a billion monthly active users and is the
second most popular online site for secondhand goods, behind eBay, according to
a 2022 survey by Statista, a company that provides market data. Meta doesn’t say
much about Marketplace as a business, how its demographics may differ from
Facebook overall and whether it has a vision to grow the platform in its annual
reports. Meta did not respond to questions about whether it has long-term
business goals for Marketplace or if it was aware of the platform’s popularity
among Gen Z.

Some buyers say they prefer Marketplace over Craigslist, which was popular among
older generations searching for used goods, because unlike Craigslist,
Marketplace buyers and sellers have profiles with ratings that make them more
trustworthy and messaging is built-in on Facebook, making communication easy.

Marketplace is free for buyers to use. Although sellers can encounter
transaction fees, many of them avoid it by selling locally and asking buyers to
bring cash when picking up their purchase. Ms. Chiu said she usually paid using
Venmo, though she would bring cash if a seller insisted.

Ms. Chiu and Ms. Su said their favorite Marketplace purchase was a couch from
West Elm, which the seller had for less than a year. The couch cost $1,200 at
retail, and they purchased it for $145. Ms. Chiu said the seller had warned her
that the couch had cat scratch marks, but when she and Ms. Su showed up to look
at it, they didn’t see many scuffs.

Some of their other favorite Marketplace finds include a Zojirushi rice cooker
(retail price: $150; purchased on Marketplace for $50), a Dyson vacuum (retail
price: $470; purchased on Marketplace for $135) and an IKEA NORDEN extendable
table (retail price: $350; purchased on Marketplace for $150).

In total, Ms. Chiu and Ms. Su said they spent approximately $1,400 on more than
30 items purchased from Marketplace and estimated that they saved more than
$3,000.

Not all of Ms. Chiu’s and Ms. Su’s purchases have been successes: Ms. Chiu once
bought a plant from a seller that she discovered had root rot when she tried to
repot it. Buyers have to work out returns with sellers on Marketplace, and Ms.
Chiu’s plant seller later offered her a refund of 50 percent of the price she
had paid, which she accepted. Ms. Su said she once bought a bookshelf that fell
apart once she was home. She was not able to get a refund.

Ms. Su said that she was aware of Marketplace scams and tried to avoid them.
“There are many scammers that try to ask for personal information when messaging
about items — so beware of that too!” she warned. (Meta provides users with
guides on recognizing and avoiding scams.)

Sebastian Ramos, a junior at DePaul University in Chicago, also uses Marketplace
to buy and sell items, and he even once got a free couch (estimated retail
price: $1,300). He has also purchased acrylic vinyl record shelves (estimated
retail price: $45; purchased on Marketplace for $10) and sold his used Nintendo
3DS (retail price: $200; sold on Marketplace for $150).

Mr. Ramos, 21, said he did not use Facebook for social media, but he enjoyed
purchasing secondhand items on Marketplace to save money and also because he
liked shopping at thrift stores.

“You don’t have to pay more for a new thing when you can find something that has
been used, or even slightly used, for a lot cheaper,” he said.

Sarah Williams, who lives in Kenosha, Wis., is an executive assistant and a new
mom. Shortly after she and her husband found out that they were expecting a baby
last year, Ms. Williams said Marketplace was the first place she started looking
to buy baby items.

The first item on her list was a light-toned wooden crib. But the cribs that she
found online were listed for $1,200 and were out of her budget.

“The prices were just absolutely ridiculous,” Ms. Williams, 24, said.

After a rigorous two-week search online, she found a crib she liked that a woman
who lived near her had listed on Marketplace. After messaging back and forth
through Facebook Messenger with the seller, Ms. Williams and her husband drove
to the woman’s house to inspect the crib. They bought it for $300 — 75 percent
less than the original price — after they saw that it was in good shape.

“It was a very nice exchange, and it felt very personable,” Ms. Williams said.

Ms. Williams said she hoped to find other mothers on Marketplace who had items
they no longer needed because their children had outgrown them.

Like Ms. Williams, Ms. Chiu and Ms. Su said that being able to network and meet
new people when picking up their Marketplace purchases had been an enjoyable
part of their moving experience and settling into their new home.

“That’s what Facebook started as, and it’s cool that Marketplace is also
fostering that,” Ms. Su said.

LOVE IS BLIND’S JIMMY AND CHELSEA REVEAL RELATIONSHIP STATUS

Posted on 2024-03-14 by Tami Peterson

Clay Gravesande and AD Smith: Not Together

While Clay expressed his hesitation to getting married due to his own outlook on
his father’s infidelity, AD reassured him that they would prevail as a couple
and all seemed to be well between the two.

But once faced with the task of saying I do to forever at the altar, Clay said I
don’t instead, telling AD that it wouldn’t be “responsible” of him to get
married knowing he wasn’t ready.

Cue the shock.

“I’m going to put the work in for you,” he told AD, “and we’ll go through
this together. I don’t care what nobody says; I know fully I’m not ready for
marriage and you deserve the best. And if I’m not ready to give you 100 percent,
I won’t go there with you when I’m not ready…I can’t say yes right now.”

It was a revelation that made AD declare through tears that the relationship was
a waste of her “f–king time.”

As for Clay, he also revealed that financial—and emotional—ties played a big
part in him walking away. “I looked at myself in the mirror and said, ‘Am I a
husband?’” he admitted, “and the answer was no. Am I deeply in love? The answer
was no.’”

During the reunion, Clay expressed that he made a mistake and wanted to date AD,
but she played coy on if she’d ever consider getting back together.

AD confessed that she did go on a couple dates with costar Matthew Duliba after
filming wrapped, but they are not together.

INSTANT POT LEG OF LAMB

Cooking Leg of Lamb in an instant pot is not only easy, it’s also incredibly
tender and flavorful. This Keto Easter dinner comes together in under an hour!

Tender leg of lamb is usually a labor of love. Most recipes call for roasting
for upwards of an hour and a half. And I certainly love to cook it that way when
I have plenty of time on my hands.

But Instant Pot Leg of Lamb cuts that time almost in half, AND it results in
unbelievably juicy, succulent meat. Ever since I first tried this method, I’ve
been sold.

Paired with low carb sides like Cauliflower Rice Pilaf and lemony Sugar Snap
Peas, it makes a wonderful spring meal. It’s always part of our Keto Easter Menu
Plan!

WHY YOU MUST TRY THIS RECIPE

Instant Pots are wonderful inventions, and they do so much more than just soups
and stews. I think some people tend to forget that, but I’ve made everything
from Easy Chicken and Mushrooms to Keto Cinnamon Bread.

The sauté function is incredibly valuable when doing something like leg of lamb,
because you can brown the roast all over as you would in a dutch oven. Browning
always brings out more flavor.

I still like to pop the roast under my broiler at the very end of cooking, to
crisp up the fat a little more. But you can skip that step if you are short on
time. Regardless, you will have perfectly cooked meat that is meltingly tender.

I encourage you to give this Instant Pot Leg of Lamb a go and let me know what
you think!

READER REVIEWS

“I love how easy and delicious this recipe was! Can’t wait to make it again!” —
Steph

“This is an awesomely easy and yummy recipe. I made a little change and it’s
worth it. Instead of water, I used low sodium beef stock and made a delicious
gravy with it after the lamb was cooked.” — Cindy

“It was yummy my family loved it, I cooked my lamb on New Years 2022!” — Renee

INGREDIENTS YOU NEED

 * Boneless leg of lamb: You want to find a lamb that will fit inside your
pressure cooker. Boneless is going to work best here, as bone-in tends to be
much larger and takes longer to cook. Try to get a roast that’s three to four
   pounds in weight.
 * Garlic: Always use fresh garlic when pairing with lamb.
 * Fresh rosemary: If you don’t like rosemary, try other herbs like marjoram or
thyme. You can also use Italian seasoning.
 * Water: I added some water to create the pressure, but you can use beef or
   vegetable broth.
 * Olive or avocado oil: A few tablespoons of oil will keep the roast from
sticking to the bottom of the pot during browning.
 * Salt and pepper

STEP-BY-STEP DIRECTIONS

1. Prepare the roast: Pat the lamb roast dry and season with salt and pepper.

2. Brown all over: Set the Instant Pot to sauté and add the oil. Once the oil is
hot, brown the lamb on all sides.

3. Pressure cook: Insert the rack into the bottom of the Instant Pot. Add the
water to the bottom of the pot. Place the lamb on the rack and set the Instant
Pot to meat/stew. Cook 25 to 35 minutes, depending on how rare you want it (30
minutes is about right for medium rare on a 4lb leg of lamb).

4. Release the pressure: Let the pressure release naturally for about 10
minutes, then vent to release any remaining pressure. Test the internal
temperature of the lamb with an instant read thermometer. If it needs more time,
you can return it to the pot for a few minutes or you can cook it a bit longer
in the oven after broiling the top.

5. Broil: Preheat the broiler. Remove the netting from the lamb and spread the
garlic and rosemary all over the top and sides. Set the lamb in a baking dish
and broil 6 inches from the heat for about 2 minutes, to brown the top.

6. Rest: Let the roast rest about 10 minutes before slicing.

EXPERT TIPS

When estimating how long to cook your lamb in the pressure cooker, remember that
lamb is best when it it is somewhat pink inside and not well done. So it’s
better to cut the cooking time by a few minutes instead of adding more.

A general rule of thumb for Instant Pot Leg of Lamb is to cook is about 12
minutes per pound. If it’s not up to temperature when it comes out of the pot,
you can leave it in the oven for a few extra minutes after broiling the top.

If you want to make a gravy, use chicken or beef broth instead of water. Then
you can follow my tips here for a good keto gravy.

Leftovers can be place in an air tight container and refrigerated for 3-4 days.
You can also freeze leftovers for up to 3 months.

WHAT HAPPENS NEXT WITH THE TIKTOK BAN BILL

Posted on 2024-03-14 by Willie Miller

What happens next with TikTok?

The video social media app isn’t disappearing from smartphones any time soon.
The legislative process is still in its early stages after the House’s passage
of a bill mandating a sale by the app’s Chinese owner, ByteDance, or be banned.
Next, the bill is heading to a skeptical Senate, after which President Biden
would need to sign it into law. Even after that, it might not happen.

Here’s what to expect.

WHAT HAPPENS NEXT IN THE LEGISLATIVE PROCESS?

The bill needs to be approved by the Senate, which could also make changes to
the text of the legislation.

Several senators have already raised concerns about the legislation as it is
currently written. For example, because the bill’s text explicitly names TikTok
and ByteDance, some are worried it could violate a part of the Constitution that
bars Congress from targeting specific entities with legislation. (The bill’s
supporters say this will not be an issue.)

Several prominent senators who could help decide whether the legislation moves
forward have been noncommittal. Senator Chuck Schumer of New York, the
Democratic leader, hasn’t said if he will bring it up for a vote. His spokesman
did not respond to a question about his plans.

Senator Maria Cantwell of Washington, a Democrat and chairwoman of the Senate
Committee on Commerce, Science and Transportation, said in a statement that she
would be speaking with “Senate and House colleagues to try to find a path
forward that is constitutional and protects civil liberties.”

WILL TIKTOK BE BANNED IMMEDIATELY IF THE BILL BECOMES A LAW?

President Biden said last week he would sign the bill if Congress passed it. But
even if he does, it would not result in an immediate ban.

ByteDance will have six months to find someone to buy the app. If ByteDance
finds a buyer that satisfies the government within that time period, the ban
will never take effect. If not, app stores and internet hosting companies will
no longer be allowed to offer TikTok for download or send updates to the app.

HOW LIKELY IS IT REALLY THAT WE LOSE ACCESS TO TIKTOK IN THE UNITED STATES?

A ban becomes more likely if TikTok can’t find a buyer who can afford a price
tag likely to be in the tens of billions of dollars, according to analysts.
That’s likely to be difficult.

A sale or divestiture could also hinge on whether ByteDance is willing to sell
or spin off TikTok’s whole global footprint or only its American operations. The
legislation forbids a connections between the two companies after a sale,
raising complications if a U.S. TikTok needed access to the parent company’s
algorithms or other global versions of the app.

A ban could also result from the Chinese government blocking TikTok’s sale.
China has criticized the new legislation, and Beijing appeared to take steps in
2020 that would give it the ability to block the transfer of TikTok’s algorithm.

COULD ANYTHING DELAY A BAN?

If the House bill becomes a law, TikTok or someone else will probably challenge
its legality in court. A possible ban could be delayed while they fight that
legal battle with the government. And a judge could ultimately scrap the
legislation entirely.

WILL TIKTOK DISAPPEAR FROM MY PHONE IF IT IS BANNED?

The bill that passed in the House on Wednesday does not appear to include any
way for the government to remove the TikTok app from your phone. The bill’s
sponsors did not immediately respond to a question about what would happen to
versions of the app that were already installed on smartphones.

But its block of app stores and hosting services from sending updates to the app
or assisting in the maintenance of the app could degrade the service for
existing users even if TikTok is already installed, and the app could quit
working altogether.

WHAT WILL HAPPEN TO MY TIKTOK POSTS?

TikTok is required under the law to let you download your videos and other
content.

GEORGIA WOMAN GETS STUCK UNDER CONVEYOR, DIES WHILE TRYING TO GET AIRPOD,
AUTHORITIES SAY

Posted on 2024-03-14 by Laura Obrien

A Georgia woman died last week after she dropped an AirPod under a conveyor and
got caught in a chain that moves the machine while reaching for it, authorities
said.

According to an incident report from the Columbia County Sheriff’s Office, a
witness told investigators that line worker Alyssa Drinkard, 21, dropped the
AirPod below the conveyor while on shift at a plant for Club Car around 9:45
p.m. Friday.

The company makes golf carts and other vehicles.

When she tried to get the earbud from under the machine, she got caught in the
chain that moves the conveyor, the witness said, according to the report.

Due to the way Drinkard was pinned, the witness — identified as fellow worker
Fae’Zsha Smith — “was not able to get her out, so she called for maintenance to
come and shut the machine down. They began taking it apart once the machine was
down and called 911,” the report says.

Emergency personnel freed Drinkard, of Grovetown, “by cutting the metal frame
from around the conveyor and pulling her out,” the report indicates.

Drinkard still had a pulse when she was freed from the machine, and emergency
personnel performed life-saving measures on her before she was hospitalized, the
incident report said.

Club Car did not respond to NBC News’ request for comment Wednesday afternoon.
In a statement to The Augusta Press, the company confirmed a worker on Friday
night sustained critical injuries at its primary manufacturing facility in Evans
before dying.

“First responders were immediately notified, and we thank them for their quick
response to provide medical care and transportation to the hospital where the
worker unfortunately later passed away,” the company said. “Our sincere
condolences and thoughts are with the family, friends and all impacted by this
loss. We are working with authorities and the contractor in an investigation to
determine the facts about what led to the incident.”

Smith, 25, said Wednesday that she has not been able to shake the images of
Drinkard lodged under the conveyor.

“I’m kind of traumatized from seeing her that way,” Smith said, her voice
sometimes quivering as she remembered her former colleague.

Drinkard was working across from Smith when Drinkard said she dropped an AirPod
under the conveyor, Smith said.

Smith then looked under the machine and saw the earbud. She recalled telling
Drinkard that she’d get it for her once it was safe to do so.

“She said, ‘It’s OK, I’ll just get new ones,'” Smith said.

Only second passed before Smith said she looked down and saw a horrifying scene.

The machine caught Drinkard’s arm, Smith said, noting that it was bent and there
was a significant amount of blood after Drinkard tried to reach for the AirPod
from her side of the work station.

Drinkard had worked at the plant for about a year, Smith said, and was quiet but
well-liked by other line workers. Drinkard was invited to go out with
colleagues, and would only sometimes show up, but when she did, her presence was
always noticed, Smith said.

“When she did come out, it was always laughs. She was always so sweet. She was

K-POP BAND BLACKPINK SELECTED AS TIME ENTERTAINER OF THE YEAR 2022

Posted on 2024-03-14 by Tami Peterson

Global pop sensation Blackpink have been chosen as Time magazine’s 2022
Entertainer of the Year, making the four-woman band the second K-pop artists to
earn the title, after BTS in 2020.

Selected by YG Entertainment, a big South Korean record label that screens
performers for star quality and trains them intensively, the quartet – Jennie,
Jisoo, Lisa and Rosé – found international stardom quickly after their 2016
debut.

Their first LP, “The Album,” sold more than one million copies in less than a
month after its 2020 release.

In a Time feature marking the Entertainer of the Year award, the group revisited
their journey, from playing at Coachella in 2019 to performing “Pink Venom” at
the VMAs earlier this year.

“We put in a lot of work so we could look like superwomen,” rapper Jennie told
Time. “We’re very normal girls, at the end of the day.”

Talking about their success – and the pressures that come with it – Jennie said
the band perform from the heart.

“If we consider this in the business way, we wouldn’t be able to do this,” she
said.

Part of the group’s global success comes from their cosmopolitan backgrounds.
Singer Rosé, who was born in New Zealand and raised in Australia, called it “a
plus” in the studio that they’re all from “different cultures.”

Jennie was born in South Korea but grew up in New Zealand, while dancer Lisa is
from Thailand. Singer Jisoo is the only one of the group born and raised in
South Korea.

Blackpink currently are performing across Europe until the end of the year as
part of their “Born Pink” world tour, which kicked off in October.

CAPRESE SALAD WITH BASIL OIL

Posted on 2024-03-14 by Wilbert Mack

THIS SIMPLE CAPRESE SALAD SERVED WITH BASIL OIL IS A WONDERFUL WAY TO SHOWCASE
YOUR BEAUTIFUL SUMMER TOMATOES AND ABUNDANT FRESH BASIL. IT’S KETO, LOW CARB,
AND GLUTEN FREE, SO IT WORKS WITH ALMOST ANY DIET PLAN – AND IT’S PRETTY ENOUGH
TO IMPRESS YOUR GUESTS!

Caprese salad is a classic Italian dish that has been enjoyed for generations.
This is a simple yet flavorful recipe that is perfect for summer days when fresh
tomatoes are in season. This salad is not only delicious, but also packed with
health benefits that make it a great addition to your diet.

WHAT IS A CAPRESE SALAD?

Caprese salad originated in the island of Capri, Italy, in the 1950s. It was
created to showcase the colors of the Italian flag – red, white, and green. The
salad consists of fresh tomatoes, mozzarella cheese, and basil leaves, drizzled
with olive oil and seasoned with salt and pepper.

The simplicity of the dish has made it a favorite among Italians, and it has
since become a popular dish worldwide.

INTERESTING FACTS:

 * The word “Caprese” means “from Capri,” the island where the salad was
   created.
 * Traditional Caprese salad is made with buffalo mozzarella, which is creamier
and more flavorful than regular mozzarella.
 * The salad is traditionally served as an antipasto, or appetizer, but can also
be served as a main course or side dish.

HEALTH BENEFITS OF CAPRESE SALAD:

Caprese salad is not only delicious but also packed with health benefits.
Tomatoes are rich in lycopene, a powerful antioxidant that protects against
cancer and heart disease. Mozzarella cheese is a great source of protein,
calcium, and vitamin D.

Basil leaves contain essential oils that have anti-inflammatory and
antibacterial properties. And we all know that olive oil is one of the
healthiest oils you can eat.

So literally everything on this plate is good for you!

WHY IT’S GOOD FOR KETO:

Caprese salad is an excellent choice for those on a keto diet. It is low in
carbs and high in healthy fats, and also filling and satisfying, making it a
healthy option for anyone looking to lose weight.

Tomatoes do contain carbs, but by slicing them thinner and using a higher ratio
of cheese to tomato in this salad, it remains very keto friendly.

HOW TO STORE LEFTOVERS:

Caprese salad is best served fresh, but if you have leftovers, you can store
them in an airtight container in the fridge for up to two days. Make sure to
keep the salad separate from any bread or other foods that may cause it to
become soggy.

RECIPE NOTES:

 * I used heirloom tomatoes in a variety of colors in my caprese salad, but you
can use any ripe tomatoes you have on hand.
 * I opted to use a basil oil rather than layer basil leaves between my slices,
but you can add the leaves to it and still use the basil oil (I’ve never
heard of too much basil honestly) or you can use the leaves of basil and
simply drizzle with olive oil in the classic style.
 * If you don’t care about the layered presentation, this caprese salad can be
made in a bowl with chopped tomatoes, chopped mozzarella , and then toss it
in the basil oil to serve.
 * The basil oil calls for a teaspoon of white balsamic vinegar which gives it a
sweet tanginess. If you don’t have it or can’t find it, you can use regular
balsamic vinegar or an apple cider vinegar. If you opt for apple cider
vinegar you may want to add a teaspoon of sweetener to it. I recommend
tasting it first and then decide to add it or not.

WHETHER YOU’RE LOOKING FOR A QUICK AND EASY LUNCH OR AN ELEGANT APPETIZER, THIS
KETO CAPRESE SALAD IS SURE TO BE A HIT!
