Ingredients
 * 16 cups broccoli Steamed
 * 1 cups butter
 * 4 tbl All purpose flour
 * 1 ea onion large
 * 2 1/2 cups Milk
 * 3 cups swiss cheese shredded
 * 6 cups cheddar cheese shredded
 * 4 ea eggs beaten

Instructions
 1. Preheat the oven to 350°
    
 2. In a 6 quart sauce pan, combine butter & flour and heat until bubbly
    
 3. Stir in the onion
    
 4. Gradually add milk, stirring well
    
 5. Bring to a boil for 1 minute, stirring well
    
 6. Season with salt and pepper
    
 7. Stir in eggs and cheese, mixing well
    
 8. In a large mixing bowl, combine the cheese mixture and the steamed broccoli
    and transfer into a 9" X 13 " X 2" casserole dish
    
 9. Bake for 30 minutes

 * 2 cups buttermilk
 * 1/4 cup butter
 * 2 cups Gold Metal whole wheat flour
 * 3 tbsp Agave
 * 2 tsps baking powder
 * 1 tsps baking soda
 * 1 cup pecans chopped- 1 cup BEFORE chopping
 * Creme Cheses optional
 * 2 apples
 * Ole Smokey Tennessee Moonshine Apple Pie Moonshine As needed

Instructions
Pancakes
 1. In a large bowl, bet eggs with wire whisk until fluffy.
 2. Cut butter into the eggs
 3. Beat in remaining ingredients just until smooth.
 4. Fold in nuts
 5. Heat griddle or skillet over medium heat or 350° F (to test griddle,
    sprinkle with a few drops of water. If bubbles jump around, heat is just
    right)
 6. Spray griddle or pan with a cooking spray before heating.
 7. For each pancake, pour batter from a cup or pitcher onto the griddle or pan.
    Cook until puffed and dry around edges. Turn and cook other side until
    golden brown.

Apple Topping
 1. Core, slice and peel 2 larger granny smith apples.
    
 2. Cut the apples into 1/2" - 3/4" cubes and place in the skillet.
 3. In a pan large enough to easily hold your apple chunks, pour Ole Smokey
    Tennessee Moonshine Apple Pie Moonshine to ~ 1/2" deep. Warm the liquid
    until wisps of steam begin to rise, then place the apple chunks into the
    liquid. Sprinkle with cinnamon and cover. Stir occasionally.
 4. When the apples are nearly soft, over and place on simmer.

Recipe Notes

This is my rendition of the Whole Wheat Buttermilk Pancake recipe at
BettyCrocker.com

I replaced the 1/4 cup sugar with the 3 tbsp of agave sweetener

I also replaced the 1/4 cup vegatable oil with 1/4 cup of soft butter

The apple topping just sounded good

Number of servings is totally dependent on the size of the pancakes

 * 1 cup chopped walnuts dark chocolate chips (either are optional)
