Baby Blues Luncheonette in East Williamsburg, Brooklyn, is updating the classic
Greek diner with dishes like the H.L.T., with grilled halloumi, lettuce and
tomatoes on Pullman bread. My favorite is the Plato plate with scrambled eggs,
bacon, pita and avocado.

Some diners have been saved by newer, younger ownership, like the Three Decker
Diner in Greenpoint, Brooklyn, and S & P Lunch (shown here), previously home to
Eisenberg’s in the Flatiron district. In both cases, the interiors have largely
been preserved.
