WHY HOMEMADE PASTA?

We stumbled on and fell in LOVE with the Italian proverb:

“Noi non potremo avere perfetta vita senza amici.”

which translates to “There can be no perfect life without friends.”

We have been amazed at the power mixing flour and eggs has had in deepening our
friendships and we are hopeful these recipes and products and do the same for

FREQUENTLY ASKED QUESTIONS


WHAT KIND OF FLOUR SHOULD I USE?

All-purpose flour is a good starting point, but you can also experiment with
bread flour (higher gluten for chewier pasta) or semolina flour (a coarser
texture for thicker shapes).


HOW MANY EGGS DO I NEED?

The ratio is typically 1 egg and 100 grams of flour per person you are feeding.
We generally don’t make anything smaller than 300g of flour. And the good news
is we have a recipe that goes into much more detail on making easy egg pasta
dough.


SHOULD I USE A FOOD PROCESSOR OR KNEED BY HAND?

Short answer: which ever you enjoy more!

Longer answer: we prefer kneading by hand. Less clean up. It’s fun. And a great
way to involve the kids in the kitchen.
