About Us ADVERTISEMENT THE SPOTLIGHT TEST2 THE RIGHT CHEMISTRY: CRACKING THE CAUSE AND EFFECT CONUNDRUM After mixing a couple of colourless solutions, I tap the flask with a magic wand and the solution instantly changes to gold. Another tap with the wand and the gold becomes blue. Then I turn the wand around, tap again, and magically the colour vanishes. Joe Schwarcz is director of McGill University's Office for Science & Society (mcgill.ca/oss). He hosts The Dr. Joe Show on CJAD Radio 800 AM every Sunday from 3 to 4 p.m. Related Joe Schwarcz, Special to the Montreal Gazette Nov 6 2019 THE RIGHT CHEMISTRY: INVESTIGATING THE BENEFITS OF DATES Learning to navigate a maze or having your ano-genital distance measured to monitor exposure to endocrine disruptors is unpleasant enough, but not nearly as troubling as having one of your testicles twisted 720 degrees so that researchers can study the effects of antioxidants on testicular torsion. After torsion had been introduced, the problem was resolved surgically and the effects on the testicle were studied and compared with that in rats that had not been pretreated with the date extract. The researchers report that the date extract had a protective effect. The researchers who hail from Qassim University in Saudi Arabia and Suez Canal University in Egypt attempt to make a case for the "therapeutic effects" of dates by surveying the literature for studies that investigate any of the natural components of dates. Study any specific component of dates, or some extract of the fruit in the lab or in an animal model, and some effect will be noted. So, while dates may not delay a date with the Grim Reaper, they do have something going for them. Dates have the highest sugar content of any fruit, with four dates containing about 60 grams, close to double that in a soft drink! Joe Schwarcz, Special to the Montreal Gazette Nov 6 2019 THE RIGHT CHEMISTRY: KETO DIETS WORK, BUT IS THERE A CATCH? Harvey advised Banting to give up sugar, as well as bread, butter, milk, beer and potatoes with the result that the undertaker lost 46 pounds and 12 inches off his waist in just 38 weeks. It was basically Banting's diet that was resuscitated and popularized by Robert Atkins in the 1970s, and it is an extreme version of the Atkins diet that is now promoted by dedicated keto worshippers. There are numerous studies published over the last 20 years that have compared low-fat diets to low-carb diets with the overall conclusion that the low-carb diets are more effective in terms of weight loss, at least in the short term. Unfortunately, there are no long-term studies of keto diets. Triglycerides, a significant risk factor, actually decrease on a very-low-carbohydrate diet, as does the body's own production of cholesterol. Again, the problem is that there are no studies of people who have followed a keto diet long enough to note whatever effect such a diet may have on heart disease. A keto diet can lead to weight loss. Joe Schwarcz, Special to the Montreal Gazette Nov 6 2019 THE RIGHT CHEMISTRY: DOES TIMING OF MEALS MATTER? In Guatemala and Poland, the largest meal is at lunch, with breakfast and dinner having equal calories. In France, Switzerland and Italy, breakfasts are small, suppers somewhat larger, but the biggest meal is at lunch. Swedes eat small lunches and their breakfasts and suppers have the same calorie content. The benefits of eating the largest meal of the day in the morning are supported by a 2017 study that involved more than 50,000 Seventh Day Adventists. Subjects who ate the largest meal early in the day tended to have a lower body mass index than those whose largest meals were lunch or dinner. Perhaps the most interesting finding was that the lowest body mass index was found in people who ate breakfast and lunch but then did not eat again until the next morning, fasting for some 18 to 19 hours. Half the women consumed 700 calories at breakfast, 500 at lunch and 200 at supper, with the other half following the diet in reverse order. My takeaway, for whatever it is worth, is that it is better not to have the biggest meal of the day in the evening. Joe Schwarcz, Special to the Montreal Gazette Nov 6 2019 THE RIGHT CHEMISTRY: EDIBLE INSECTS AND ANTIOXIDANTS Any youngster who has been to summer camp will be familiar with "bug juice". That's the drink made by dumping fruit-flavoured crystals and sugar into water. A kilo of crickets provides about 200 grams of protein, not much less than the 250 grams found in a kilogram of beef. Furthermore, cattle require about 8 kg of feed to produce 1 kg of meat while crickets can produce the same amount from just 2 kg of feed. Free radicals therefore can be referred to as "oxidizing agents" and any species that neutralizes them as "antioxidants". Oxidative stress occurs when there are more free radicals being produced than can be mopped up by antioxidants. Surprisingly, the antioxidant capacity of crickets, caterpillars, silkworms and grasshoppers was greater than that of orange juice or olive oil, both of which are good sources of antioxidants. While a hundred grams of orange juice may have the same antioxidant capacity as a hundred grams of ants or grasshoppers, it is far easier to consume a hundred grams of juice than a hundred grams of insects.
