This million dollar chicken casserole is rich, creamy, and incredibly savory.
It's so good, it's hard to stop eating! The cottage cheese is the trick to
getting such a creamy texture and using rotisserie chicken keeps this recipe
quick. Feel free to add peas or steamed broccoli. Serve with a simple salad or
noodles.

INGREDIENTS

 * 1 (10.5 ounce) can cream of chicken soup

 * ½ cup cottage cheese

 * ½ cup sour cream

 * 4 ounces cream cheese, at room temperature

 * 1 ½ teaspoons Creole seasoning

 * ½ teaspoon onion powder

 * 1 teaspoon garlic powder, divided

 * 5 cups shredded rotisserie chicken

 * 1 tablespoon chopped fresh parsley

 * 30 buttery round crackers (such as Ritz), crushed

 * 4 tablespoons unsalted butter, melted

 * 1 cup shredded mozzarella cheese

 * 1 teaspoon sliced scallions, or to taste

 1. Preheat the oven to 350 degrees F (175 degrees C).
    
    

 2. Stir cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole
    seasoning, onion powder, and 1/2 teaspoon of the garlic powder in a medium
    bowl until well blended and smooth.

 3. Fold in chicken and parsley until evenly coated.

 4. Combine crackers, melted butter, and remaining 1/2 teaspoon garlic powder in

 5. Spoon chicken mixture evenly into an 11x7-inch or 9-inch square baking dish.
    Sprinkle evenly with mozzarella then top with cracker mixture.

 6. Place on a foil-lined baking sheet and bake in the preheated oven until
    crackers are golden brown and edges are bubbly, about 35 minutes. Garnish
    with scallions, if desired.
    
    


RECIPE TIPS

This dish will keep in the freezer for up to 4 months. To reheat, thaw overnight
or up to 6 hours in the refrigerator, then bake according to directions.

To change up the flavor of this dish, you can easily substitute different types
of rotisserie chicken, like mojo, lemon pepper, or garlic.

You can use just about any crisp butter cracker.

I hate that this review system removes my paragraphs creating one run-on
paragraph. Someone needs to get the webmaster to correct that ridiculousness.I,
like another reviewer am giving this a 5 star bump because it does not deserve
the ridiculous 1 star reviews from people with "health-nut-itis" who only read
the recipe and found out it doesn't work for their restricted diet or restricted
palate. Then there are the people who substituted ingredients and didn't like
it...come on.For me this is about a 4 star, maybe 3.5 star recipe as it is,
mainly because of what it is...it's just a somewhat basic casserole and could
use some noodles and maybe step on the seasonings a bit (for those of us who
know where Flavortown is).BUT! When I was fairly strict with carbs this would
have been right up my alley. Skip the cracker topping and you have a fairly low
carb main dinner serving.The author needs to clarify the baking dish size. "9
inch" is not a baking pan size. 9x9" is, and 9x13" is, and the baking dish in
the photography looks to me like a 9x13". I dont think the volume of these
ingredients would work in a 9x9" baking dish but the author should be more
specific.

Awe,,,seemingly the first review was refused for being too honest! So let me try
again. Firstly the use of "powder",,,on the rest of the planet WE CALL IT SALT!
Secondly, an actual recognised recipe, consists so much more than shop bought
packets, that you open, stir, then heat up ! The dish looks fantastic in the
picture, but never judge a book by its cover ! There are way too many flavours,
a positive "food crash" in the kitchen! As is the norm in umuricu,,subtlety in
cooking is so much better than the entire supermarket shelf on one plate !
