Use

N2O chargers have a wide range of culinary uses. N2O is primarily a foaming
agent (adds micro gas bubbles to foods and drinks) but is also used as flavor
infusing agent (increases the rate of flavor transfer from food products into
liquids). 

Foaming agent: N2O is used as a foaming agent, commonly with cream (whipped
cream) but also a wide range of other sauces and mousses. This make those foods
light and fluffy and is favored by cooks and chefs to change the texture and
feel of those foods. Plating those sauces  from a dispenser can also add
artistic elements to the food.

Infusing agent: N2O can be used as an infusing agent to take the flavour from
foods and quickly infuse it into liquids. This is commonly done with cocktails
where fruit and other food flavors are put into alcoholic liquids (vodka etc..),
then N2O added which transfers the flavor from the food into the alcohol.  The
addition of the N2O makes the infusing process that usually takes weeks, only
take a few minutes. This makes trying out new combinations of flavors for
cocktails quick, easy and fun.
