Broccolini & Sausages

 

Easy and delicious, this broccolini and sausages recipe is the perfect meal to
make when you have a busy evening planned. This meal, which serves four, is
ready for your family to enjoy in about 30 minutes.

Ingredients

 * 4 tablespoons olive oil
 * 2 tablespoons butter
 * 6 cloves garlic, crushed or thinly sliced
 * 1 tablespoon Calabrian chile paste or 1 teaspoon crushed red pepper
 * 1 cup chicken or vegetable stock
 * 1 1/2 to 2 pounds broccolini, ends trimed, stalks cut into thirds
 * Salt and pepper
 * 6 Italian pork sausages, hot and/or sweet, or plant-based Italian sausage
 * 1/2 lemon, juiced (about 2 tablespoons)
 * 4 crusty Italian hoagie rolls, split and toasted
 * Extra-virgin olive oil for drizzling

Directions

 1. Heat 2 tablespoons of oil in a deep skillet or Dutch oven. Add the butter.
    Once it foams, add the garlic and chile paste. Stir for 1 minute, then add
    the stock and broccolini.
 2. Cover and cook until the broccolini is crisp-tender, about 5 to 6 minutes.
    Uncover and toss until the edges of the broccolini are crispy and the stock
    is absorbed, 1 to 2 minutes. Season with salt and pepper.
 3. Use a sharp knife to pierce the sausage casings. If you're using plant-based
    sausage, remove the casing.
 4. Add 1/8-inch water and the remaining 2 tablespoons oil to the skillet. Add
    the sausages and cook, turning occasionally until browned and cooked
    through, about 15 minutes. Transfer to a cutting board and let rest for a
    few minutes.
 5. Cut the sausages on an angle in 1-inch pieces. Arrange the sausages on top
    of the broccolini and drizzle with the lemon juice. Drizzle the rolls with
    the extra-virgin olive oil, then construct the sandwiches using the rolls,
    the sausages, and the broccolini.
