Watergate salad is an American classic. This delightful side dish salad or
dessert is made with pistachio-flavored instant pudding mix, canned pineapple,
mini marshmallows, nuts, and whipped topping. It comes together in minutes and
after one to two hours in the refrigerator, this chilly treat will impress your
dinner guests with it's light and fluffy texture and colorful appeal. Garnish
with crushed pistachios and maraschino cherries.

WHAT IS WATERGATE SALAD?

Watergate salad, or Pistachio Delight, is a dessert salad or side dish made with
pistachio pudding, canned fruit, whipped topping, and other ingredients. The
original recipe was originally published by General Foods under the title
"Pistachio Pineapple Delight."



A Chicago food editor renamed it "Watergate Salad" when she printed it in her
column in 1975, presumably to pique readers' interests after the presidential
scandal that shared the same name.

Added 20 oz crushed pineapple and the whole 8 oz whipped topping container as
many sugested. I took this to a baby shower and as soon as i put it on the table
i saw someone else had brought one also. I was a little dissapointed about that
BUT as i saw more and more people going to my bowl over and over and saying
"whatever this is, it's good!" i knew the bowl was going to be empty soon. When
we cleaned up at the end of the shower , my bowl was in fact empty and the other
lady's was almost full. I felt a little bad about that, but hey, if it's better
what can you do? LOVE the nuts in it!

This recipe calls for the juice, we hated this and it looked sloppy. The next
time I made it I drained the pineapples a couple of times to make sure there was
NO juice. It came out very fluffy and quite nice looking.

1 star cuz this recipe stinks!!! I've been making this 50+ years for my fam &
they rave about it & beg for it. I have always used:MY 5 STAR RECIPE:•1-4
serving box of instant pistachio pudding mix•1-20 oz can pineapple chunks,
drained•1-8 oz block cream cheese, room temp (because I don't like
marshmallows!)•1 cup chopped walnuts•8 oz4 frozen whipped topping, thawedNOTE: I
use my immersion (stick) blender on the pineapple chunks because I think
pineapple chunks are tastier than crushed!Step 1: Immersion blender pineapple
chunks a bit & add cream cheese & blend further until you reach your desired
texture.Step 2: Add in the pudding powder & blend well.Step 3: Fold in the
thawed cool whip & nuts.Step 4: If you can, refrigerate for an hour at least!

I've been making this for years. Most recently I take it twice a month to our
Community Lunches (Potluck.) It has become a staple at these meals. I use One 3
oz instant pistachio pudding mix, 20 oz crushed pineapple including juice, a
handful or 2 of shredded coconut, handful of walnuts or pecans. This is usually
a pale green color so I stir in 1 drop of green food coloring before folding in
8 oz Cool Whip. Lastly I fold in 2 or 3 cups of mini marshmallows. Sometimes I
used the fruity colored marshmallows for a festive look. I never bring home any
left overs.

A delicious addition to any meal. I have made the salad several times and it
comes out perfect every time. I made a couple of changes to the original recipe
by adding only half of the pineapple juice and using chopped pecans for the
nuts. I feel these changes adds a more flavorful taste. Enjoy!

friend who’d just lost his Father.SO, I wanted it to be good.I loved the
results! It was delicious!My alterations of the recipe were:Pecans versus
