Cornel Toraja Coffee is a family owned and operated company focused on arabica
coffee production from farm to cup. The coffee farm grown at Pulu Pulu village,
Toraja Utara, Sulawesi Selatan, Indonesia. George Guling, the fourth generation,
is a founder and also working as a coffee processor who directly controlling the
process and the consistency of green bean quality. Head office and roastery are
located at Yogyakarta. We have been supplied other coffee shops and roasters all
around Indonesia who have spirit of specialty coffee movement.

PROCESSING DETAIL

What does it mean for a coffee to be fully washed?
Synonymous with simply washed or wet process, a full washed coffee is one which
has had the skin, pulp and sticky pectin layer of the coffee fruit removed prior
to the seed being dried. Traditionally, washed coffee are produced by using a
pulper to remove the skin and some pulp of the coffee fruit. After this
mechanical step, the seeds, which are protected by a stiff seed hull known as
parchment, along with their pectin some remaining pulp, are placed in a
fermentation tank for a period of time which depends on a number of factors, of
which temperature is arguably the most important. While in these tank, native
yeasts and bacteria break down the pectin layer, allowing it, along with any
remaining pulp, to be washed away, leaving clean parchment coffee.

From the grower to the roaster to your favorite cup of coffee, it takes many
hands to create. Our Pulu Pulu coffee beans are harvested thousands of miles
away by small-lot coffee farm where coffee cherry grows with no chemical
pesticides or other additives. Carefully selected for exceptional quality, the
coffee is then roasted in small batches to highlight the acidity and floral
aroma. Also, present in the cup are notes of peach, green apple, orange, with
aroma and aftertaste of tuberose and genmaicha. Clean and sweet.

Pulu Pulu coffee is the culmination of a lot of hard work and a great
collaborative team that involved in the process. Many hands make it possible for
make your cup a reality. The red cherries are initially sorted and put straight
into the floatation tank to wash off any excess dirt, while the fruit part is
kept on. These cleaned cherries are then laid out on drying racks, spread out in
a single layer and stirred twice an hour. Total drying time can take up to forty
days under partly cloudy conditions. In the cup, it shows notes of tropical
fruits. On the palate, it is pleasant wine-like acidity, with hint of chocolate.

HONEY PROCESS

Pulu Pulu coffee is grown in an iron-rich soil which contributes to its fruity
taste. The mature cherries are hand-picked, sorted and pulped at the same day.
The pulped coffee is then laid out on drying racks underneath a uv-plastic. This
limited process takes up to thirty days. This processing method increases the
coffee’s body and intensity. Tasting seriously delicious of berries, lingering
caramel with tea undertones, clean yet juicy. Sometimes sweet results require
strenuous processes and it’s completely worth it.

ESPRESSO

One of our current single origin espresso options, the ‘Pulu Pulu - Dark Roast’
is grown in Pulu Pulu, North Toraja. Washed processing is a method that has been
done since the era of our ancestors and still being used from one generation to
generation, up until now. Tana Toraja as known as the Land of the Heavenly Kings
is the house for thousands of springs that never stop flowing. This espresso
roast of Pulu Pulu washed processed is characterised by sweet almond, dark notes
of molasses and toffee with light – orange type acidity and creamy finish.
