This million dollar chicken casserole is rich, creamy, and incredibly savory.
It's so good, it's hard to stop eating! The cottage cheese is the trick to
getting such a creamy texture and using rotisserie chicken keeps this recipe
quick. Feel free to add peas or steamed broccoli. Serve with a simple salad or
noodles.

INGREDIENTS

 * 1 (10.5 ounce) can cream of chicken soup

 * ½ cup cottage cheese

 * ½ cup sour cream

 * 4 ounces cream cheese, at room temperature

 * 1 ½ teaspoons Creole seasoning

 * ½ teaspoon onion powder

 * 1 teaspoon garlic powder, divided

 * 5 cups shredded rotisserie chicken

 * 1 tablespoon chopped fresh parsley

 * 30 buttery round crackers (such as Ritz), crushed

 * 4 tablespoons unsalted butter, melted

 * 1 cup shredded mozzarella cheese

 * 1 teaspoon sliced scallions, or to taste

 1. Preheat the oven to 350 degrees F (175 degrees C).
    
    

 2. Stir cream of chicken soup, cottage cheese, sour cream, cream cheese, Creole
    seasoning, onion powder, and 1/2 teaspoon of the garlic powder in a medium
    bowl until well blended and smooth.

 3. Fold in chicken and parsley until evenly coated.

 4. Combine crackers, melted butter, and remaining 1/2 teaspoon garlic powder in

 5. Spoon chicken mixture evenly into an 11x7-inch or 9-inch square baking dish.
    Sprinkle evenly with mozzarella then top with cracker mixture.

 6. Place on a foil-lined baking sheet and bake in the preheated oven until
    crackers are golden brown and edges are bubbly, about 35 minutes. Garnish
    with scallions, if desired.
    
    


TIPS

This dish will keep for up to 4 months in freezer. To reheat, thaw overnight or
up to 6 hours in refrigerator then bake according to directions.



To change up the flavor on this dish you can easily substitute in different
types of rotisserie chicken like mojo or lemon-pepper, or garlic. You can also
use just about any butter crisp flavored cracker.

Made it exactly as written. Gooey chicken casseroles are wonderful, but this one
was far too rich. We served it over noodles, but still too rich. So, back to the
other gooey chicken casseroles we have on file. :)

Excellent comfort food recipe! Not for the calorie or fat conscious! I made a
half recipe with chicken breasts, left out the cream cheese & scallions and
replaced Creole seasoning with cajun - was delicious and filling served over
pasta. - Nov 2023

Everyone liked and my mother-in-law loved. Easy to make and loved that I could
use a rotisserie chicken. This is a bit bland for me and hubby, so we added
smoked tabasco to the done version and it was yummy. Maybe increase creole
seasoning? My family said to mix with rice or pasta would be good and I thought
adding some veggies to the bake would also be good. I will do slight changes
next time since my MIL loved it so much and will update then. Thank you for
sharing your easy recipe.

Great recipe! The Ritz Crackers add a lot to the flavor.

I did try it this time with no and low fat. Non fat cream cheese, non fat
cottage cheese, non fat sour cream, and low fat mozzarella. No substitute for
the Ritz Crackers and used just 3 TBSP of butter.

Cooked 16 oz. Ziti for 10 minutes and put it on the bottom of the pan. Added 3/4
cup non fat half and half to the chicken mixture to allow for the pasta,
otherwise this would be dry.

This tasted incredible, and I detest non fat anything. I know these are a lot of
changes, but I hoped a non fat/low fat version would be helpful to others that
want to save on the calories without sacrificing flavor.
