POUILLY-FUISSÉ, THE MOST PRESTIGIOUS VINEYARD OF THE MÂCONNAIS





In Burgundy, in the Mâconnais region, three appellations begin with the name
Pouilly, but Pouilly-Fuissé is better known than its neighbors Pouilly-Loché and
Pouilly-Vinzelles, because of its larger production.






The Pouilly-Fuissé appellation, although known throughout the world, is not very
large. In total, 760 hectares planted on four villages (Fuissé, Solutré-Pouilly,
Vergisson and Chaintré), entirely dedicated to Chardonnay and produces a great
white Burgundy wine of excellent quality-price ratio.











Characteristics of the wines






Elegant and full of charm, these white wines of Pouilly-Fuissé appellation offer
a dress going from the pale gold to the strong gold, with green reflections.
Different families of aromas make up the bouquet: mineral notes (flint), almond
and hazelnut, citrus (lemon, grapefruit, pineapple), white fruit (peach), lime
and acacia, breadcrumbs, buttered brioche, honey. The terroirs present certain
diversities to the palate. Under opulent features, the structure is straight,
favored by a good natural richness. Finesse and distinction characterize the
Pouilly-Fuissé appellation. Not to be confused with Pouilly-Fumé from the banks
of the Loire.






Butler's advice






Rich and complex, the Pouilly-Fuissé appellation is marked by a mineral touch
which is very well suited to noble shellfish, gambas, lobsters, lobsters, but
also to cooked foie gras. Its beautiful balance of acidity and suppleness is
well suited to white meats, such as veal and poultry in cream sauce, and of
course goat cheese. The aromatic power of Pouilly-Fuissé will also harmonize
with spicy and very fragrant exotic dishes, such as couscous and fish tajines,
or shrimps in sweet and sour sauce. Sushi will perfectly support the minerality
of the Pouilly-Fuissé appellation.



Serving temperature : 11 to 13 °C.






Location






The rocks of Solutré and Vergisson, emblematic of this vineyard, remind us that
from the top of these 500 meters of altitude, 200 million years are watching us!
20,000 years ago, one of the most advanced cultures of prehistory flourished
here. Established in 1936, the Appellation d'Origine Contrôlée includes the four
villages of Solutré-Pouilly, Fuissé, Vergisson and Chaintré.














Terroirs






The rocks of Solutré and Vergisson (Bajocian escarpments) are situated on
limestone banks with entrochia, identical to those of the Côte d'Or, and have
this sharp profile due to the very hard fossil corals that have protected them
from erosion.



The vineyard occupies the slopes and the foot of these rocks on stony scree and
clay-limestone soils of the Jurassic period. The hillsides form small creeks
with fairly steep slopes, exposed to the east and southeast, between 200 and 300
meters in altitude.
