Other examples of many fascinating items on display include the 1850 Great Dunmow Fire Engine and the Fordham Lantern Clock built in the town by John Fordham in 1710. RESTORATION AND HISTORY A renowned restoration and visitor attraction A popular meeting, event and conference venue A unique and intimate civil wedding venue Home to the Great Dunmow Town Museum The Great Dunmow Maltings is an outstanding survival of the early malting and brewing industry, last functional in 1948 as part of the old Dunmow Brewery Company. The oldest parts of the maltings date from the 16th century, though the building is recorded as having undergone major refurbishment around 1780 followed by further modification in the 19th century. It is today recognised as a building of special architectural and historic importance by English Heritage, being one of only 4% of listed buildings in the country with Grade 2 status. After an abortive attempt in 1992 to dismantle and relocate the building to avoid its demolition, The Maltings was recorded by the Essex Historic Buildings Group. After temporary work to halt further structural deterioration the Great Dunmow Maltings Preservation Trust was formed in 1996 with the express purpose of preserving and restoring the building. Proposals to combine the restoration with conversion of parts of the building to form meeting rooms and to house the local town museum were formulated with close involvement of English Heritage who offered a major repair grant. This enabled the Trust to approach the Heritage Lottery Fund which then awarded major funding for the entire project. With further funding from The Pilgrim Trust, Essex Heritage Trust and BAA, work commenced in 1998 and was completed in 2000. The fully restored building now combines a fascinating insight into an historic local industry together with a fully functioning, modern meetings centre. THE BARLEY STORE Barley from the farm was delivered in sacks through a loading door at wagon height to be held in the dry Barley Store. THE STEEPING PIT A chute in the floor of the store delivered the barley directly to the Steeping Pit where it soaked for three days, the water being changed every day. THE COUCH Next the grain was moved to the Couch Area to generate heat and begin germination. And it's here, from 1797-1880, that the Excise Officer measured the volume of grain to assess the Malt Tax! THE GROWING FLOOR After three days in the Couch, the sprouting barley was spread evenly across the Growing Floors, with barley for the upper floor being thrown up through a trap door by hand shovel! During a period of some fourteen days the barley was turned with a wooden shovel three to four times a day and moved along the floors towards the kiln. THE MULLIONED WINDOWS Diamond mullioned windows still retained in the restored building were used to control the temperature of the malting barley. THE KILN From the Growing Floors the germinating barley was then spread across a woven wire floor mat on the Kiln Drying Floor to dry in the gentle heat for between two and four days, depending on the final malt required light or dark. This process stopped germination and maximised sugar content to impart flavour to the malt. THE FIRE BOX Heat for the drying process was generated in the Fire Box below the drying floor originally fuelled by wooden faggots and later by coal. The special design of the fire hole and the tile heat sink ensured even heat dispersion and avoided the malt becoming tainted by smoke. THE MALT STORE After malting, drying and cooling, the barley was sieved to remove the shoots and then stored for a few months to achieve full flavour before going to the brewery. THE MALSTER Then as now, the quality of the finished malt owed much to the skills of the Malster his physical efforts and skills being recognised by the fact that he received double the ration of the brewer to quench his thirst!. Printed copies of The Maltings illustration are available from the reception shop in the entrance foyer Bringing History To Life × As well as seeing the restored maltings at first hand, visitors to Great Dunmow Maltings and the Town Museum now have the opportunity to select and view a range of specially prepared DVD material archiving both the history of the malting trade and the social history of the town.
