But now, owners Andrea Vignali and Davide Bonadiman are going back to their roots with Al Dente Sapori, a more laid-back diner that’s taken over their next-door provedore. “We became an occasion restaurant, which is good – we followed our passion,” ex-Florentino chef Vignali tells Broadsheet. “But we were missing what we could eat every day.” While Enoteca will continue specialising in fancy seasonal set menus in its existing space (from $125 a head), Sapori will celebrate the simplified Italian comfort foods the brand became known for over lockdown – and which Vignali and Bonadiman grew up eating. Find out more “We won’t have three waiters checking your table and cleaning your tablecloth, but we’ll still have something simple and well done,” says Vignali. That could mean chilli-flecked spaghetti vongole, slow-cooked bolognaise lasagne or cacio e pepe tortellini, one of Al Dente’s bestselling takeaway items. “We’ve sold 150,000 pieces between online and [in-store] and we’re excited to finally have it served here,” says Vignali. On the snack front, find $3 mozzarella-filled panzerotti (like mini calzone) and olive ascolane (fried and stuffed), plus cheesy, saucy oven-baked gnocchi alla Sorrentina. Pastas will still be available to take home, too. Find them in the retail area along with jars of house-made pickles, spiced nuts, jams and cheese. And to drink, there’s a sizeable wine list of Australian and Italian varietals. But on Tuesday through Saturday, you can also BYO for $20 a bottle.
