Salmones Aysén is a family owned, and operated company committed to delivering
the highest quality seafood with transparency, openness and honesty.

We are the only Chilean salmon farming company devoted exclusively to the
production and distribution of Coho. Our specialization delivers outstanding
quality and service, we control the entire production cycle, ensuring a
sustainable and fully traceable product.




ABOUT US

Salmones Aysén is the youngest Salmon Farming Company in Chile, created in 2006
with very few resources, hard work, and commitment from their owners and
employees.

In Salmones Aysén it has been always important to give every person the
opportunity to develop themselves and express their ideas and we are proud to
say we have many people working with us since the beginning of the company.

This fact has created a culture of collaborating and working hard together
making our way into the market and being able to grow during these years and
slowly consolidate this company as one of the largest players in the Coho
business.

Even though we are still a small company, we make sure to be in constant
innovation, looking for the best and more sustainable ways to deliver the
outstanding quality and taste that our Coho has.


2014

• New shareholder structure. Mr Baraona and former Icicle executives purchased
Icicle’s shares in Aysén.

• Focus Strategy 100% on Coho Farming.


2017

• The Company created the strategic distribution lines Aysén Asia and Aysén
North America.

• First year BAP certification one site and the Processing Plant.


2018

• New shareholder structure. Baraona family acquired the rest of the shares
completing 100% ownership.

• 9 Seawater sites with 29,000 WFE tons sold.

• 2,900 m2 processing plant capable of processing 200 WFE tons of fish per day.

OUR PEOPLE

Our people are essential for our operation and they are the heart of our
company. Thank to them Salmones Aysén has become what it is today, we like to
see how our people develop their careers within the company and grow as
professionals helping our company to grow as well. 40 people are with us for
more than 10 year.


OUR COMMUNITY

Salmones Aysén have highlighted the importance of being a good neighbor.

In order to achieve this, we try to build good relationship with the communities
where we are located with a transparent and constant dialogue that helps us to
generate positive impact in our environment.

In this job we intend to identify their needs and negative impacts that we may
cause, in order to avoid this and generate opportunities.

The opportunities that we try to generate are always together with the local
community and sometimes with the government institutions that should address the
matter that arises. This principle is very important to us, because we don’t
want to solve every problem that the community has by ourselves, we want to be
part of the solution and help the community (that we are part of) to solve their
problems.

SMOLT

This stage begins with the fry stage and it lasts until it smoltifies (adapts to
the seawater) at a weight of approx. 120 grams. 4 months total in freshwater.


ADULT SALMON

The smolt are transferred from the freshwater sites to the sea for the main
growth stage, from 120 grams to between 3.5 to 4.5 kg. 8 to 10 months in total.

The salmon from the harvest is brought to the Processing Plant in Puerto Montt
after slaughter, where it is processed into a variety of different cuts and
packaged for sale.


EGGS

Eggs deposited in freshwater sites until hatching into a fry, a stage in which
the fish still carries the yolk in order to feed. After one month it loses the
yolk and enters the fry stage.


FRY

The fry at 8-10 grams starts to feed on its own.

standard in biosecurity, from our farms to the final consumer.

Fresh salmon from overseas sometimes is reprocessed more than 48 hours after
leaving the plant, and arrives more than 72 hours after leaving the plant to the
supermarket, increasing exposure to biological risks and deteriorating its
quality.


SUSTAINABLE CHOICE

AysénCoho is grown in half the time compared with other salmon species,
resulting in much less environmental impact.

Moreover, it is transported by sea, with a carbon footprint 20 times less lower
than the one of fresh salmon transported by plane.

AysénCoho has a feed conversion rate of 1.08, this means that, for producing 1kg
of Coho, 1.08 kg of feed are needed. This is why it is the most efficient
protein in the world.

the last 8 years for its outstanding performance in feed conversion rates.


SASHIMI QUALITY

Sashimi Quality: The ability to eat it raw. It comes from “sashimi grade”
Japanese concept which is based on how safe is the harvest and process of the
fish.

Our Coho is filleted in an isolated room, that maintain a certain temperature
and is frozen within 8 hours from harvest, ensuring the safeness of the process.


CHEMICAL AND
ANTIBIOTIC FREE

AysénCoho is immune to sea lice and ISA virus, due to the strength and tightness
of its scales, so chemical treatments are not requierd.

AysénCoho is a robust fish grown in its natural habitat (Pacific Ocean),
permitting us to have a farming process that most of the time doesn’t require
antibiotic treatments.


HEALTHY CHOICE

AysénCoho is an excellent source of Omega-3.

One serving of 5 oz of AysénCoho provides 3.24 grams of omega-3 fatty acids and
1.4 grams of EPA and DHA omega-3 fatty acids.

Supportive research shows that EPA-DHA may contribute to the maintenance of
normal vision and brain-function and may prevent coronary heart disease.

American Heart Association recommends to eat at least 8 ounces of non-fried fish
each week, which may be divided over two 3.5- to 4-ounce servings to get
essential omega-3 fatty acids.

AysénCoho is similar to wild sockeye with an intense and unique red color. This
is due to the absorption of color that Coho naturally has, which is higher than

Our frozen Coho travels by boat, generating less CO2 emissions than fresh salmon
transported by air.

PRICE STABILITY

Our frozen Coho prices are less volatile than those of fresh Atlantic Salmon,
the fact that the product can be stocked gives this product a better price

SHELF LIFE

Frozen Salmon has a longer shelf life and less drip loss than fresh salmon.

BIO SECURITY

Sometimes fresh salmon arrives to its destination more than 72 hours after being
harvested, this may result in the lost of the cold chain during that period,
which can lead to biosecurity problems.

Our Coho is processed 8 hours after being harvest, and the cold chain is
guaranteed throughout the entire process, giving us the right to declare with

company is involved to start supporting with these small changes in the way we

CLEANING OUR BEACHES

Along with the Salmon Council, Salmones Aysén has begun a program in which the
company takes control of the cleaning of a certain beach that is considered to
receive waste from many places.


GASCO PROJECT

We are working with GASCO, a local gas company, to change all of our farms
energy from oil to gas, and for the first time we are exploring to make 2 farms
carbon neutral.


REUSE OF OLD METAL CAGES

Salmones Aysén cages have been reused in different constructive projects, such
as barnyards, barns or piers.

PLASTIC RECYCLE

We recycle the plastics used in our farms, we deliver this plastic to companies
such as Mundo sur and Quo-Chile.

compost and donate to the local communities for fertilizer.
