 * Yoshimi Echizen knives are designed, forged, and sharpened in one workshop;
   closely handled and overseen by certified craftsmen in Echizen. They are
   committed to great quality and inherit and pass down knife-making philosophy
   and skill-set. This brand is a great example of craftsmanship from Echizen.
   
   These knives have an excellent profile, grind, and distal taper, as well as
   clean fit and finish. Both the kurouchi and migaki models are clad in
   stainless steel. The stainless cladding reduces the reactive surface area of
   the knives to the few millimeters in between the cutting edge and lamination
   line.
   
   The core is Super Gold 2 (SG2) stainless steel, engineered for superior edge
   retention and excellent sharpness. It's clad with a softer stainless steel
   that has a stylized star-patterned tsuchime. This model will have similar
   toughness to the Blue Super model, which is not to say tough, but not crazy
   brittle like a lot of powdered stainless steels out there.

 * Rounding the spine and choil of knives can have a significant impact on the
   in-hand feel.  While many of the knives we carry do have some easing or
   rounding already, some do not.  However, even for the ones that already do,
   we can improve upon the comfort by further rounding and polishing those
   areas.
   
   For this process, we use a belt grinder and buffer.  If the knife has a
   kurouchi finish, that finish will be removed in the polished areas.  The area
   closest to the handle (the closest 1-2mm may not be possible to reach, though
   we will do our best to do the most complete job possible.
   
   If ordering multiple knives, please email us with which ones you want this
   service for. If there are any issues that would prevent us from offering this
   service for the knife or knives you've requested, we will reach out via email
   or phone.

   names, words, or short phrases (approx. 10 words or less).  Sizing and
   placement will be determined by our team to ensure good balance and a nice
   aesthetic, as well as feasibility based on finish, available space, etc. 
   Engravings on kurouchi or tsuchime (hammer mark finished) knives may not be
   as crisp or easy to read.  Sayas with painted or lacquer finishes can not be
   engraved.
   
   Please pick a font from the product images and provide the font number along

 * These Bontenunryu models are the last of their previous form. They come with
   dark, handsome handles made of wenge, an African hardwood with intricate
   black and brown striations and lighter weight than ebony. They retain a very

   kilns of medieval Japan (Bizen, Echizen, Seto, Shigaraki, Tanba, and
   Tokoname). Tokeido has kept the traditional Bizen pottery-making techniques

   Yunomi are small cups for a wide range of liquids, cold and hot. These cups
   show the traditional Bizen beauty: unglazed when placed in a kiln but
   acquiring a natural ash glaze through the firing, with a pattern from the
   flames and shadows on the surface. When used for drinking hot tea, the
   thickness of the clay helps insulate the heat and makes it comfortable to
   hold in hand.

   and one of the first lines of aprons we carry.

 * The Plate & Garnish series is the newest design from Cork District, featuring
   completely removable straps with up to 10" of length adjustments with antique
   brass snaps for versatility and ease of washing. They can be arranged to be
   worn as a cross back apron, or over the neck.
   
   These aprons are lightweight and reversible. with one side geared towards
   prep, and features a large top pocket. The other side has two slanted top
   pockets for pens and tweezers and a kangaroo-style large pocket at the waist.
   The neck height is also adjustable on all of them.

 * Tenugui have their roots deep in Japanese history. Originally used as part of
   decorative fashion, tenugui later became part of daily life, being used
   around households and as general purpose cloths. Over time, the style, color,
   and even dying process has developed into what it is today. These pieces of
   cloth are hand dyed, using natural dyes. They should be washed in cold water
   with no detergent separately from other items. Over time, the color of these
   will fade a bit. This is something that Japanese people love about tenugui.
   These fun and artistic "pieces of dyed cotton cloth" can be used for anything
   from wiping off your hands or knife, to wrapping up your knives for storage.
   They even make good bandannas. *Wash in cold water separate from other items.
   Hang to air dry. Color will fade a bit over time. The edges are unfinished
   and will tend to unravel for about 3-5mm. Don't pull loose threads (use
   scissors to cut them if they are a nuisance).

 * Flitz is a metal polish we enjoy for patina and rust removal.  What is great
   about metal polishes like this is that they can be used on mirror-finished
   knives, damascus knives, kurouchi knives, etc. without having a significant
   impact on the overall look unlike rust erasers, BKF, sandpaper, etc.  While
   they are not as aggressive as abrasive means, they work quite well, are easy
   to use, and are faster than you would expect.  They can even be used for
   daily maintenance of carbon steel blades.  In addition to your knives (both
   stainless and carbon), they can be used on pots, pans, other metal objects
   (silverware, jewelry), and even things like fiberglass. 
   
   To use this, apply a tiny bit to a cotton pad, soft towel, or similar, spread
   over the surface you intend to clean, and, with a bit of elbow grease, rub
   until you start to see the patina or rust come off.  Once it's mostly off,
   switch to a new pad or clean section of your towel, and continue to buff
   until the surface looks clean and shiny.  You can apply this multiple times
   if necessary. For easy cleanup, it helps to do this with the object on a
   paper towel.  Also, when working near the edge, rotate the edge into the
   paper towel a bit, so as not to risk cutting yourself.  Prior to using the
   knife with food, please make sure to clean it well with soap and water.

 * Yoshimi Echizen knives are designed, forged, and sharpened in one workshop;
   closely handled and overseen by certified craftsmen in Echizen. They are
   committed to great quality and inherit and pass down knife-making philosophy
   and skill-set. This brand is a great example of craftsmanship from Echizen.
   
   These knives have an excellent profile, grind, and distal taper, as well as
   clean fit and finish. Both the kurouchi and migaki models are clad in
   stainless steel. The stainless cladding reduces the reactive surface area of
   the knives to the few millimeters in between the cutting edge and lamination
   line.
   
   The core is Super Gold 2 (SG2) stainless steel, engineered for superior edge
   retention and excellent sharpness. It's clad with a softer stainless steel
   that has a stylized star-patterned tsuchime. This model will have similar
   toughness to the Blue Super model, which is not to say tough, but not crazy
   brittle like a lot of powdered stainless steels out there.

 * After several years of development and hundreds of white hairs on poor
   Charlie's head, we are proud to introduce the White Bark Workwear Knife Roll.
   We have a design that we are very happy with.
   
   The roll is made of a slubby 11oz canvas, 100% hemp, and double-layered for
   durability. The canvas goes through a liquid and stain-resisting treatment
   that effectively prevents fluids from soaking through for a period of time.
   We have even seen peanut butter wash off of this material with minimal
   effort! The stress points have been reinforced with bar tacks to prevent
   tearing and the pockets alternate in size and can fit larger handled knives
   like a 210mm deba. The top can be folded over to fit knives up to 300mm in
   blade length. We strongly recommend the use of a saya or edge guard with
   these rolls to help with longevity and protect the bag from wear. The
   accessory pocket securely shuts with the help of marine-grade stainless steel
   snaps, so no rusting. The double loop slider is made of solid brass with
   antique nickel coating and allows the tension strap to fasten the roll
   securely. The entire roll can be wrapped around the shoulder strap and
   adjusted via a stab lock tensioner to be carried comfortably around your
   shoulder.
   
   Machine wash on cold and hang dry. Made in Los Angeles.
